Take advantage of the season and your love of all things vinegar with this delicious cucumber recipe.
Slice up about 6 cups of cucumbers and 1/2 of a red onion and place in a bowl. Sprinkle 1 tbsp of salt over the top. Let it all sit for about 2 hours then drain off the liquid. In another smaller bowl mix 1 cup of sugar and 1 cup of cider vinegar. Pour the sugar/vinegar over the cucumbers and onions. Let them sit in the refrigerator for about 12 hours for the full experience, but if you can't wait, its understandable.
This recipe is a bit different from the usual cucumbers in vinegar and its a delicious! For all you Heber Valley folks, cucumbers are 3 for $1 at Rancho Market this week!
