"A waffle is like a pancake with a syrup trap" - Mitch Hedberg

August 24th is National Waffle Day
So here are our two favorite waffle recipes. The first one, Steph's Waffles, is a simple recipe that is easy to throw together in a hurry and makes a relatively small amount of batter. The second one, 100 WAFFLES, is an easy pre-made mix that makes a grundle of waffles, but you can mix up as much as you want to use at one time, plus the little bit of wheat flour makes us feel good about it!



Steph's Waffles

1 egg
1 cup flour
3/4 cup milk
1 tbsp sugar
2 tbsp vegetable oil
2 tsp baking powder
1/2 tsp salt

Mix together and pour onto a hot waffle iron.
(This recipe needs to be tripled for our crew.)

This second recipe, 100 WAFFLES, is totally awesome for those of us who like to use make ahead mixes. This recipe requires you to make the dry ingredient mix to store away. When you are ready to have waffles, just grab it out and mix in a few wet ingredients for a quick batter.


100 WAFFLES

Ingredients:
7 cups of white flour
3 cups whole wheat flour
2/3 cup sugar
3 1/2 tbsp baking powder
2 tbsp baking soda
2 tbsp salt
2 cups regular/non instant dry milk or 3 1/3 cups instant dry milk

Mix all dry ingredients together well and store in a covered container.

To make waffles from mix add together in a mixing bowl:
1 1/4 cups of the dry mix 
1 beaten egg
1/4 cup vegetable oil
1 tbsp vinegar
1 cup water

Stir together until all ingredients are moistened. Pour desired amount onto hot waffle iron.
